Confetti Salad
from Simply in Season Children's Cookbook
1/4 cup lemon or lime juice
2 T orange juice
1 T honey
Mix together in a large bowl until the honey is dissolved.
2 cups carrots
2 cups apple
Grate carrots.
Chop apples.
Add to juice mixture immediately. (The juice will prevent the apples from turning brown.)
1 T fresh mint
1/8 t salt or to taste
1/4 cup raisins
Snip rinsed mint leaves into small pieces.
Toss with remaining ingredients and serve.
